Sometimes when cooking Moroccan style foods you need to use a tangy tasting ghee to mimic something closer to "smen" to saute your foods. Pure Organic and Swad brand ghee are more subtle and just like sweet cream butter in scent. Ziad brand is tangy as a stick of cultured butter that has had time to 'age' into a delicious mildly tangy scent and taste. Like comparing a mild cheddar to cream cheese.
