It is semi-hard with a natural rind and a sweet, salty, buttery taste. The uniqueness of San Joaquin Gold impressed us in both its flavor and texture. Made from unpasteurized milk from Fiscalini's own herd of 1400 Holstein cows, it is a wonderful cheese for snacking, but can also be used as a topping for soups or salads. In addition, it grates well and melts easily. Use it on hot or cold sandwiches or as a Caesar salad garnish.

Delicious!Mar 27, 2009
By webgrunt Fiscalini Cheese's web site says about San Joaquin Gold: "At the 16 month age, this cheese won a gold medal in London, at the World Cheese Awards in 2004, and repeated with another gold medal in 2005 and a silver medal in 2006."
I believe it. This truly is a world-class cheese. I recently bought 15 different exotic cheeses for a cheese tasting party, and nearly everyone liked this one best.

This is a really delicious cheese. The interior is about the consistency of a hard cheddar, maybe a little more crumbly, and suitable for cutting into snack size pieces. The description says it's somewhat like cheddar, but I find it more like a softer parmigiano, with a nutty sweetness along with the sharpness. Very nice with nuts and dates. It gets harder toward the outside, and works very well for grating like a hard parmigiano. The outermost part is quite hard. I haven't tried to melt it, but it is delicious grated or shaved onto pasta dishes, salads and even into egg dishes. I wish I could find it in our local upscale cheese shops - it's funny to me that while many of our restaurants are trying to use more local and California products, with cheese it seems to be that the farther away and more obscure the better. Too bad this comes from boring old Modesto, not some virgin-tended cave on an uncharted island off Sardinia.

By Sian San Joaquin gold is an aged, semi-hard raw milk cheese in the style of Fontina. harder and nuttier towards the rind, reminiscent of a good Parmesiano Reggiano, and softer and buttery towards the center. It pleasantly doesn't have the crunchy graininess of a lot of raw milk cheeses. As far as I'm concerned it's unbeatable as a snacking cheese, and I hear it melts and grates well too.

Not as good as European cheesesJun 16, 2011
By Alexander Leyderman This cheese has an Italian name, however it is not on a par with most of imported European cheeses. It has a nice firm rind, but inside it is grainy. Does not melt nicely either. Considering the expense of shipping, it is too pricey for the quality and taste.
