This is an amazing work of art and love!! The first layer of the cheese is made from the morning milking, the vegetable ash is then layed down, and the second layer is from the evening milking. The result is a lovely product that needs to breathe for about 45 minutes after removing from refrigeration---although the wait is tortuous, it would be a crime not to allow it this time to ready itself for the palate. It is worth the wait and the money. The cheeses is smooth and rich and lucious!! It is now my very favorite cheese!! It simply fills your mouth with indescribable flavors. Try it and you won't be disappointed!! Consider no cracker, or something with no strong flavor of its own. It would be a shame to compromise the cheese.

I impulsively splurged on a chunk of Humboldt Fog cheese in a local market based on a recent, glowing newspaper review. Having just tossed a different cheese, I know "glowing reviews" don't always mean I will like it.
Just tried the cheese now, straight out of the fridge, on fresh slices of red bell pepper. What a yummy lunch, finished off with a bowl of berries and light whipped cream.
The cheese looks a bit like blue cheese when unwrapped. However, the flavor is uniquely Humboldt Fog's own: creamy, smooth, full bodied yet not overpowering in any way. A mouthful of pleasure. Am saving my next sampling of this delicious discovery for an evening glass of wine and room temperature tasting on water crackers .... expecting it will taste exquisite!
This is a cheese you'll enjoy sharing with guests.
