3Cook rapidly and rareDec 08, 2010
By Jay W. "Jay W."
I can't really rate this item. I wanted to comment that it is possible that the previous reviewer (Brian Morris) either had old steaks or that when he cooked them "low and slow" they were overcooked. Wagyu can't be cooked the same as most US steaks. It must be cooked very quickly - usually no more than 2 minutes (or less) per side for a 3/4" - 1" steak so it is almost raw or at most rare. It is very good served raw as carpaccio. The fat in wagyu/kobe steaks has a high amount of unsaturated fat which is different than usual US beef and it melts at 77F. So if it is cooked long/slow and/or at high temps fat runs out of the meat which results in dryness and flat taste. Try at least once more - it's worth it.

1Not that good!Sep 28, 2009
By Brian Morris
I ordered the ribeyes and I was sorely disappointed. The steaks arrived with my kobe beef hamburger patties in a very nice and well packed container. The hamburger patties were tasteful and I felt satisfied with them. The ribeyes however were well marbled but lacked very little taste. I BBQ'd the steaks the same as the steaks I get from the grocery store with about half the seasoning. I season lightly to begin with. I wanted to taste this "excellent" beef I had heard so much about from places such as the food network and a short list of other cooking shows I frequently watch. After cooking the steaks low and slow the taste was very bland and almost seemed like it was freezer burn. I will not be ordering these steaks again. If I ever buy Kobe again it will be from my grocery store fresh(if they ever carry it). I have no idea how old the steaks I ordered were but I have a feeling they were older than I would approve of. I just wasted 80 dollars for a 2 bad steaks.

3Brian Morris cooked his steaks wrongMar 08, 2012

Iahev also not hat had these steaks, but I agree with Jay W; user Brian Morris cooked his steaks wrong and ruined them. I thought this as soon as I read the feedback.

You do not cook a Ribeye slow and low. You cook it fast and extremely hot. With all steaks, you want to cook it under super hot heat and sear it right away.

On the other hand, ribs, brisket, now those are meats that benefit from cooking slow and low.
