I make my own Polish and Italian sausage, and have been doing it for years, but sometimes I bow down to the "experts" when it comes to a sausage I don't make regularly.
The Palacios Hot Chorizo is excellent and I wouldn't presume to try to duplicate it. The couple of pounds I ordered the other day was "snacked on" by me and gone by the next day!

I purchased this because I have a hard time finding good quality chorizo locally. This was not quite as spicy as I expected, but the flavor and texture were excellent (if I need a touch more heat, I can get it in a number of ways.) It was very good just for snacking, I cooked some with scrambled eggs and a little onion for a nice breakfast burrito, and we have used it in huevos rancheros. I will be keeping some on hand from now on.

Oh, that was yummy! This chorizo arrived, and was gone the next day. I loved the taste of the smoked picante paprika in it, full and deep flavored. The chorizo was supposed to make chorizo and clam stew, never quite made it to the pot. This chorizo is great!
